Sauces and such


There are a few staple condiments for lack of a better phrase, that we’re always making to serve with meals.  Here are three standbys:

Tzazik  (Very good with just about any meat dish.  I love it on grilled eggplant too.)

1 pint of greek yogurt

1 persian or half an english cucumber in 1/4 inch dice

1/3 cup of fresh mint leaves, finely minced

2 minced cloves of fresh garlic

1/2 teaspoon of salt

Mix all together and serve.

Tomato Amba (delicious with fish and rice)

1/2 cup Amba (pickled mangos) diced

2 cups diced fresh tomatoes

1/2 teaspoon salt

Toss together and serve

Breakfast Salsa (we eat this with eggs in the morning)

3 chopped fresh tomatoes

2 T. either minced fresh basil and/or mint

juice of one fresh lemon

1/2 teaspoon salt

1/2 teaspoon black pepper

2-3 T. extra virgin olive oil

Toss together and serve with eggs.  Also makes a great fresh sauce for pasta.
